These carnitas are a mind meld between traditional carnitas, with its slow roasted, citrusy, buttery, fall off the bone tenderness, and al pastor, with its spicy and sweet notes. I love slow roasted pork in all of its formations – Nom Nom Paleo’s kalua pork is on high rotation, and I’ve posted a previous Instant pot carnitas recipe – and we’re going with an Instant Pot again here for expediency.
