I’m in love with my Instant Pot in the winter time – making hearty, warming meals in a fraction of the time is a lifesaver. Risotto is one of those things that can take forever on the stove – and your arm gets tired from stirring forever! This Instant Pot risotto is made with butternut squash, but you could make this Instant Pot risotto with any type of winter squash. In the hall of butternut squash Instant Pot recipes, this one is definitely up there. It would be a great Thanksgiving side dish if you’re looking to do something a little different this year!

Are you guys nearly apple-d out yet? At the beginning of Autumn, I get so excited about apples – I make every possible apple recipe. It can get old though! I was trying to think of a slightly newer way to cook with apples — while I love applesauce, it just can be a little meh. So, when I came across a roasted applesauce recipe in Food 52’s book Genius Recipes, I was excited. I changed the recipe to lean further into the roasty flavors – added onion and thyme — this roasted apple compote is luxurious, decadent and savory, and not your typical applesauce recipe.

Here’s a super Autumnal baking recipe: this pumpkin cake is all the best flavors of September + October in a bite. Made with pumpkin, maple syrup, and cardamom, and topped with a yogurt-cardamom glaze, it’s slightly healthier than the average bundt cake (but still a treat for sure). It’s my favorite pumpkin cake I’ve ever made, and the cardamom and maple syrup are such fall-y flavors.

Here’s a recipe for a sweet potato soup that is so easy to make – it’s just dump-and-go in an Instant Pot, followed by a quick whiz in a blender to bring it all together. Using sweet potatoes, onion, bone broth, and spices, it’s light and warming at the same time. you’ll love this spicy sweet potato soup as a quick breakfast (serious!), or appetizer for any meal. This Instant Pot version of spicy sweet potato soup is good for you and delicious, too.

Here’s a cauliflower rice salad recipe lightened up and made Whole30/Paleo. This cauliflower rice salad with grapes, cucumber, and tarragon recipe is perfect for a summer potluck or cookout; the flavors only improve in time as the raw cauliflower absorbs the flavors. This recipe, of course, can be made with Israeli couscous or rice and be really good, but if you’re trying to cut carbs, cauliflower rice is a great option and is surprisingly delicious with the grapes + tarragon. It’s an unexpected use of grapes, too!

This healthy fruit cobbler recipe is endlessly customizable and a good recipe to just have in your internal memory bank.

Here is a recipe for blueberry bars that combine the best flavors of classic blueberry muffins with the structure of a berry buckle — I’m calling these blueberry muffin bars! I realized not too long ago that while I love most baked goods, sometimes blueberry muffins and of themselves are a little *much* for me. I also am of the school of thought that you should just eat what you want when you’re having a craving for something, so when a muffin craving strikes, I tend to run with it and make the most delicious version of that muffin craving I can do. Whereas blueberry muffins can be dry and the ratio of blueberries to dough is off, these blueberry muffin bars are perfectly jammy with the high blueberry content, have great lemon-zesty notes, and won’t put you into a sugar coma. I hope you enjoy these blueberry muffin bars as much as we do!
